Berry and chia seed jam

Here's a recipe for an easy to make, tasty and healthy berry and chia seed jam.

It is low in calories, nutritious, and fantastic to add to your breakfast.

You could use it as jam on bread but if you want a healthier and more filling breakfast, top Greek yogurt with some of this jam and add some seeds and nuts.

I am using frozen berries, a mix of blueberries, strawberries and raspberries. Berries are rich in antioxidants and several important nutrients. They are also low in sugar compared to other types of fruit.

Chia seeds are nutritional powerhouses, rich in fibre, omega3, essential minerals, and antioxidants. They absorb liquid and form a gel, which helps to thicken whatever you put them into.

Once you have added the chia seeds to the mashed berry mix, you need to leave the seeds time to absorb the liquid and thicken the the mixture, at least a couple of hours. I tend to make it in the evening and leave it in the fridge over night.

As long as you cover it, this jam will keep in the fridge for several days.

Berry and Chia Seed Jam

  • 300g, 10 1/2oz, mix of frozen berries
  • 50ml, 2fl oz water
  • 1 tablespoon maple syrup, or honey (preferably raw)
  • 4 heaped tablespoons chia seeds
  1. Add the berries and water to a pot over a medium heat. Bring to simmer for two minutes, then turn off the heat.
  2. Use either a potato masher or a fork to crush the berries. Stir in the maple syrup, or honey.
  3. Transfer the berry mix to a bowl and stir in the chia seeds. Once the berry and chia seed jam is cold, cover the bowl and place it in the fridge.
