Asparagus and Herb Quiche


A light and delicious asparagus and herb quiche, perfect for a lunch together with a large salad, or as part of a buffet.

I made little portion-sized quiches this time, as you can see in the photo, but the recipe is equally good for a normal-sized quiche.

The herbs I am using for this quiche are dill and parsley, and they go beautifully together with the asparagus and the three different cheeses in the quiche, cottage cheese, goat's cheese and Parmesan cheese.

I use white spelt flour for the pastry for this quiche, together with butter and some cottage cheese as well. Whatever dairy I use in the pastry - cottage cheese, creme fraiche or full-fat natural yogurt - I then add to the egg mixture for the filling.

Asparagus, particularly green asparagus, is a good source of vitamin C, folate and potassium. It is also high in antioxidants, packed with fibre and protein and contains anti-cancer properties.

Asparagus is one of only a few vegetables that contains inulin, a unique type of carbohydrate that helps promote the growth of healthy bacteria in the large intestine.

Recipe For
Asparagus And Herb Quiche

For the pastry recipe, click on Pastry For Quiche. (I used white spelt flour and cottage cheese in the pastry.)

15 asparagus spears

A handful of dill- chopped

A handful of parsley - chopped

3 eggs, organic or at least free range

200g, 7oz, 1 3/4 cup, cottage cheese (or use natural yogurt or creme fraiche instead)

50g, 1 3/4oz, goat's cheese - crumbled

50g, 1 3/4oz, 1/2 cup, Parmesan cheese, grated

 1 teaspoon sea salt

1/4 teaspoon black pepper

  1. While the pastry case is cooking in the oven (200C/fan/180C/400F/gas mark 6), either cook the asparagus spears in a steamer pot, or in a small amount of water in a lidded pot, for 2-3 minutes until the spears are al dente. Place the asparagus spears on plate covered with kitchen paper.
  2. In a bowl, mix the eggs, cottage cheese, goat's cheese and Parmesan together. Stir in the herbs and season with salt and pepper. Taste and check the seasoning.
  3. When the pastry case is ready, pour the mixture into the case and place the asparagus spears on top. Bake in the oven for 25 - 30 minutes – until the filling is set and nicely browned on top.

Like all quiches, this asparagus and herb quiche can be made well in beforehand. Simply re-heat the quiche in the oven before serving.
